Refreshing Summer Salad

It's time for another Reasonable Recipe!


In most of the country this week, it's been So. Freakin'. Hot.  I didn't want to cook dinner tonight (I slaved away last night making a fantastic bella braised chicken) so we decided to get a pizza.  Well, as any girl who's tried to lose those "last few pounds" can tell you, pizza is the devil.  The tasty, tasty devil.  So, I decided to make one of my favorite guilt-free salads as a side.  Seriously, chomping away at this salad is both satisfying and strategic - I didn't gorge myself on pizza, and I feel pretty darn good right now.  So, here it is!



Refreshing Summer Salad
Ingredients:
1 small tomato, chopped
1/2 cucumber, seeded and chopped
1/4 cup red onion, chopped
1/8 cup crumbled fat free feta
1/8 cup croutons (I chop mine a bit to make them smaller because the ones we buy are big)

Mix the ingredients all together and then top with red wine vinegar to taste, mixing well.  I like to use 2-3 tablespoons, but I'm a fan of the tart taste.  Your preferences may vary.

That's it - a crisp, cool, easy salad that doesn't carry a lot of guilt but does have a lot of flavor.

    1. I'm actually starting to get into feta more and more. I like the low-fat or fat-free crumbled kind. Lots of flavor without the guilt. :-)
